Cut up into chunky bite-sized pieces some potatoes, zucchini, onions, baby carrots (leave whole), sweet potatoes, whole garlic cloves. Put in a 9×13 baking dish. Drizzle all over with olive oil, add salt and pepper to taste Bake at 350 for 45 minutes.
